Every now and then I crave a good meal from my childhood. This past week I was full-out craving Taco Soup. Let me tell a quick story about Taco Soup. I thought my momma had invented it, that it was original to her. When one of my friend’s mums made it I asked if they had gotten the recipe from my momma. I was positively convinced that my mum was the goddess of Taco Soup. Anyways, I was very happy to make it the other day and thoroughly enjoyed all of my flashbacks!

Here’s the recipe:

1 lb ground beef
1 pkg or 1/4 cup taco seasoning
48 oz tomato juice
12-14 oz can of kernel corn
16-20 oz can kidney beans, rinsed

Brown beef and add taco seasoning. Throw in the tomato juice, corn and beans. Bring to a simmer.
Serve over crushed corn chips and garnish, as desired, with cheddar cheese and sour cream.

As my mum wrote, “Yum. Dinner in 10 minutes or less depending on how fast you can open cans!!!”

Sounds like the perfect solution to the busy pre-Christmas preparation days.  I’ll have to give it a try.

My favorite comfort foods… Lemon Meringue Pie- my Nana always made it ‘just for me’ .  The meringue was sky high and so light! It was amazing! But I think the love in it was the best part.

My Mom’s Tuna Melts- I can make them exactly the same way, with exactly the same ingredients, but somehow what your Mom makes for you always tastes better.  And nothing beats my Dad’s Pheasant .

Grandma Muirhead’s Shortbread and Orange Chiffon Cake are traditions I love and look forward to.

And of course, I am greatly comforted by ANY food that I didn’t have to cook!  I feel very cared about when my family cooks for me.  Every now and then Bjorn will call up and say that they are coming to make us dinner- he’s a seriously outstanding cook,so it always tastes delicious,  but it has the added benefit somehow of making you feel like you just got a big ol’ bear hug.

Thanks for this, it was fun to think about comfort food today.

I think my kids will love this, have to give it a try. I find I make my mom’s recipes at least once a month when my dad comes to visit. This time it was Schwartie’s hashbrowns and oven fried chicken. Yummy.
