I was led to a great recipe recently; Perfect Popovers are delicious!  I made some with dinner last night and sprinkled a little bit of parmesan cheese on the tops before I put them in the oven to bake. I don’t own a popover pan (one day I will!) so I used a muffin tin and made 8 instead of 6. Conor REALLY liked them and was VERY upset when I ate the last one. For those who don’t know (like me, before I had one), a popover is kind of like an upside down yorkshire pudding but without all the fat. It balloons up and is hollow from the bottom up. It’s also more eggy than a yorkshire. On top of all that, they are easy to make! Try them out and let me know what you think!
