I just wanted to quickly share a recipe that was a big hit: Curried Chicken with Carrots, Rice and Lime. It was really easy to make and I love it when I can stick something in the oven and wash dishes or something, although to be honest, this meal didn’t generate very much dish washing. I used chicken breast instead of legs and I only used one lime and roasted 1 lb of carrots the first evening and then roasted a little less than 1 lb for the next evening (so that not everything needed to be reheated in the microwave).
